Pan Fried Egg with Tomatoes
This is a very controversial dish in China. Not because it tastes bad or offends anyone. It tastes super good and all humans with taste buds should love it. The thing is, Northern China and Southern China cook it differently. South cooks with sugar, and the North cooks with salt. But, my family cooks with both, so here, is the recipe for both, the fusion of all of China. Huh, Chinese Fusion of Chinese food.
Ingredients
Tomatoes *3
Eggs *3
Salt
Sugar
Chinese Onion
Black Pepper
Cooking Ware
Frying pan
Chopsticks
Small bowl
Spatula

Strapped Bass, generally smaller than the Snapper fish
Crack the eggs into the small bowl, stir them with chopsticks. If you are not good with chopsticks, then egg beater will work just fine, but remember, Chinese food, always chopsticks.
Normally Chinese tomatoes need peeling, but American tomatoes don’t need it. Slice it up into pieces of your choosing.
Heat up the frying pan and pour a moderate amount of oil into it and let it simmer. Use your chopsticks and drop a little bit of the battered eggs to see if the oil is warm enough. If the egg bits started to drizzle, then it’s ready.
Pour the battered eggs into the frying pan, and immediately stir it with the spatula. When it is a little bit cooked, immediately take it out of the pan. Do not overcook the eggs, leave it a bit raw because you will need to put it back to the pan. This is important.
Best if you clean the pan before the next step, but it isn’t important here. The only downfall of not cleaning the pan is that you have overcooked egg bits in your dish, but that doesn’t really matter.
Drizzle a little bit of oil into the pan. You do not need the oil to be hot to do the next step, because hot oil might splash onto your skin if the pan is too hot. Cook at maximum heat.
Lower the potatoes into the pan, and immediately start “shoveling” (stir fry).
After you hear the tomatoes sizzling, drizzle some black pepper into the pan, an amount of your liking, and stir fry.
Drizzle some salt and some sugar into the pan, amount of your liking. You can put a lot sugar, but don’t put too much salt.
Normally the tomatoes will be cooked in 5 minutes, but it depends on the heat. Grab a piece, and taste it to see if it is cooked. It doesn’t have to be fully cooked because well, you know, tomatoes are edible raw.
After the tomatoes are cooked, put the eggs into the pan as well, and stir fry. After 2 minutes, it’s ready to serve,
